Throughout my professional career I have been fortunate to have the opportunity to write (as author, or as co-author together with my colleagues in the Technology Department of METALQUIMIA) different articles about meat technology and manufacturing processes for meat products (cooked, cured and marinated), works that have been published in the most prestigious magazines and journals of the international meat sector.
It is, therefore, a source of great pride and satisfaction to be able to share with all of you in this personal weblog a compilation of this body of knowledge.
